Azuma Style Usuba knives.
The Kasumi Usuba knives are made of white high carbon steel and soft iron. Kasumi knives are relatively easier to use and are recommended for all levels of users. Blade lengths from 210mm to 360mm are available to order.

“Usuba” literally means a thin knife. The blade is thin and straight in rectangular shape. It is an essential knife for professional Japanese chefs for peeling vegetables into thin sheets and cutting vegetables into thin strips.   This is Azuma style.
